Planning an event can be complicated. There are so many elements to consider. From choosing the perfect venue, floral designer, rental firm, and entertainment. When it comes to choosing your caterer, we strive to make the process simple and fun! After you’ve spoken to one of our event producers and discussed menus and pricing, it’s time for a food tasting. For us this is the time to prove to you that you’ve made the right choice.
Upon arriving for your tasting, you’re greeted warmly by your event producer and seated in our beautifully appointed tasting room. We warn you to come hungry, as you’ll be tasting your chosen items as well as those of the other groups in attendance. It’s or belief that more is better and allows you to try something you may not have considered originally.
Our recent tasting was attended by one of our valued wedding planners Marni of So Smitten Events. Her husband Michael of Michael Farmer Photography came along to shoot our food. We’re thrilled about how beautifully he captured the essence of our tastings. You can see from the images that it’s an experience that encompasses hospitality, attention to detail, an abundance of options, and exceptional service. Now, lets dive in and enjoy!
We began with appetizers that included: Oven Roasted Quesadilla Rolls with Smoked Chicken, Sharp Cheddar Cheese, and Cilantro Avocado Tomatillo Dip; Roasted Creamy Tomato Soup Shooter with Mini Sage and Fontina Grilled Cheese Sandwiches; Thin Sliced Filet, Smoked Provolone and Arugula on Toasted Baguette with Creamed Horseradish and drizzled with White Truffle Oil; Coconut Beer Battered Shrimp with Tangerine Mustard Sauce, Mini Caprese Skewers of Cherry Tomato, Fresh Basil and Mozzarella and drizzled with Virgin Olive Oil, Aged Balsamic and Cracked Black Pepper; Thai Chicken Satay with Mild Peanut Sauce; Pulled Pork Sliders with Tangy Slaw on Brioche Bun; Crab Cake Sliders with Lemon Aioli and Micro Greens on Brioche Bun; Mini Pastry Bites with Sun Dried Tomato, Roasted Shallots and Feta; Flatbread Pizza with Pear, Back Fig Jam, Maytag Bleu Cheese, Fontini, Prosciutto, and Arugula
Next we move on to salads. On this evening we offered two choices that included: Gourmet Greens and Romaine with Mandarin Orange Segments, Sun Dried Cranberries and Caramelized Walnuts, with Raspberry & Meyer Lemon Vinaigrette; and Mexican Caesar Salad tossed with Pepitas, Roasted Corn, Queso Ranchero, Sliced Tomato, and a Homemade Avocado Cilantro
Moving on to entrees there were five plates presented to all of our guests that included:
Plate One: Chicken Piccata – Breast of Chicken with Sherry, Fresh Lemon Capers and Garlic; Herb and Panko Crusted Breast of Chicken stuffed with Spinach, Prosciutto, Pine Nuts and Swiss with Light Garlic Cream Sauce; Swiss Potato Au Gratin; Whole Baby Green Beans with Fire Roasted Red Peppers, Shallots, and Almond Butter
Plate Two: Fire Grilled Baseball Cut Sirloin with a Creamy Chimichurri Sauce, Oven Roasted Breast of Chicken sauteed with Wild Mushroom and Jalapeno Jack Cheese and Drizzled with Cilantro Pesto Cream Sauce, Rosemary Roasted Red Potatoes with Cracked Black Pepper and Grilled Garden Vegetables with Lemon Garlic Butter
Plate Three: Macadamia Nut Crusted Mahi Mahi garnished with Mango, Papaya Citrus Salsa, Grilled Salmon with Orange Miso Sauce, Sesame Cilantro Basmati Rice Broccolini Spear with Smoked Paprika, Almonds and Garlic
Plate Four: Vegetable Lasagna with Grilled Eggplant, Julienne Vegetables, Sliced Mushrooms and Parmesan, Chef’s Famous Three Cheese Macaroni finished with Golden Parmesan Bread Crumbs, Penna Pasta with Tri-Color Peppers, Zucchini, Onions, Fresh Garlic, Black Olives and Basil Pesto Cream Sauce
Plate Five: Boneless Short Ribs with Black Peppercorn Demi-Glace garnished with Matchstick Carrots on a bed of Garlic Mashed Potatoes
Do you still have room for dessert? We’re glad to hear it because this offering is a favorite of all of our clients and is has become legendary. It’s our Famous Almond Custard Bread Pudding with Salted Caramel Sauce, Fresh Almond Whipped Cream, garnished with Toasted Almonds and Strawberries.
